  • ◎ Main ingredients (1 serving)
    - 90 g brown rice, 10 g pea, 40 g spinach, 50 g button mushroom, 40 g zucchini, 20 g onion, 20 g egg white, 20 g yacon, 10 g cabbage, 10 g broccoli, 10 g tofu

    ◎ Supplementary ingredients (sauce)
    - Bean sauce
    40 g black bean, 20 g water, 5 g oligosaccharide, 1 g lemon juice, 0.2 g salt
    - Spinach marinade
    0.2 g sesame oil, 0.2 g soy sauce, 0.1 g minced garlic, 0.2 g sesame salt

 

 

Recipe

01. Use 9:1 ratio of brown rice to peas and cleanly wash them. Soak in water for about 30 minutes, and then cook until rice is well cooked.

02. Cut yacon, cabbage, and zucchini into 4 cm long pieces. Thinly slice yacon and cabbage. Slice zucchini at 0.3 cm thickness by rotating and then thinly slice them.

03. Thinly slice onion and soak in cold water for a short while to remove spice.

04. Cut mushrooms sideways into pieces 0.3 cm thick.

05. Add cooking oil to a heated frying pan, and fry yacon, cabbage, zucchini, and mushrooms separately for 30 seconds over high heat.

06. Parboil spinach and broccoli in boiling salt water for about a minute and then cool them in cold water.

07. Tear broccoli into bite size, and marinate spinach using the spinach marinade.

08. Whip only egg white, and then add oil to a frying pan and thinly fry the egg white. Next, thinly slice the egg into the same size as the vegetables.

09. Cut tofu into 1.5 cm long, 1.5 cm wide, and 0.8 cm thick cubes. Sprinkle sesame salt on the tofu and parboil in boiling water.

10. Soak black beans in cold water for about 4 to 5 hours, grind using a blender, boil until the liquid is thick, and add the ingredients to make the bean sauce.

11. Place prepared ingredients over and around the rice in a bowl and add the bean sauce.
